Delicious Malpua Recipe: A Delectable Indian Dessert

Introduction

Malpua is a popular Indian sweet dish that is commonly prepared during festivals and special occasions. This mouthwatering dessert is loved for its fluffy texture and rich flavors. Made with a combination of flour, sugar, milk, and aromatic spices, malpua is a treat that indulges your senses. In this recipe, we will guide you through the process of making traditional malpua from scratch, ensuring that you achieve the perfect blend of taste and texture.

Ingredients

For the Malpua Batter:

  • 1 cup all-purpose flour (maida)
  • 1/4 cup semolina (sooji)
  • 1/2 cup milk
  • 1/4 cup yogurt (curd)
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (kesar)
  • 1 tablespoon crushed fennel seeds (saunf)
  • Ghee or oil, for frying
For the Sugar Syrup:
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 teaspoon cardamom powder
  • A few strands of saffron (optional)
  • Chopped nuts for garnishing (pistachios, almonds)

Instructions

1) In a large mixing bowl, combine the all-purpose flour, semolina, milk, yogurt,                      cardamom powder, saffron strands, and crushed fennel seeds. Mix well to form a                smooth batter. Let the batter rest for 15-20 minutes.

2) Meanwhile, prepare the sugar syrup by dissolving the sugar in water over medium            heat.
Add cardamom powder and saffron strands for additional flavor and aroma. Stir the         mixture until the sugar has completely dissolved. Once done, remove from heat and set     aside.

3) Heat ghee or oil in a deep frying pan over medium heat. Using a ladle, pour a small            amount of batter into the hot oil to form a round shape, similar to a pancake. Repeat          the process for the remaining batter, ensuring not to overcrowd the pan.

4) Cook the malpuas on medium heat until they turn golden brown and crispy on both          sides.
Once done, remove them from the pan and place them on absorbent paper to remove        excess oil.

5) Dip each malpua into the warm sugar syrup for a few seconds, allowing them to soak        up the sweetness. Make sure to coat both sides of the malpua with the syrup. Place the      soaked malpuas on a serving platter.

6) Garnish the malpuas with chopped nuts, such as pistachios and almonds, to add a               delightful crunch and visual appeal.
